What is Gouda cheese?

Gouda cheese is a Dutch semi-hard cheese made from cow's milk. The cheese takes its name from the town of Gouda, where cheese has been traded and produced since the Middle Ages. Genuine Gouda cheese is now produced all over the Netherlands. Only cheese produced in the Netherlands may bear the label ‘Gouda from Holland’. This label is protected by the European Union and guarantees authentic flavour and quality. Perhaps the best cheese in the Netherlands!

Different types of Gouda cheese

There are several types of Gouda cheese, varying in flavour and maturity. Below is an overview of the different types.
  • Young Gouda: a mild, creamy cheese with a subtle flavour that is soft and unctuous. Ideal for those who like a mild cheese without too much sharpness.
  • Aged Gouda: slightly fuller flavour, with slightly spicy undertones. The cheese is still creamy, but offers more depth and a slightly firmer texture.
  • Extra mature Gouda: more powerful and pronounced, with an intense flavour distinguished by a pleasant sharpness and a fuller, ripe taste experience. Perfect for those who like distinctive cheese.

Maturing times of the different types of Gouda cheese

  • Young Gouda: ripened for 4 to 6 weeks
  • Mature Gouda: matured for 4 to 6 months
  • Extra mature Gouda: matured for 7 to 9 months
  • Old Gouda: matured for at least 12 to 16 months Each ageing period adds a unique flavour dimension, ranging from mild and creamy to intense and powerful.

How is Gouda cheese made?

Making Gouda cheese starts with fresh cow's milk from the farm, which is curdled to separate solids from the liquid. After initial processing, the cheese is pressed, salted and stored in ripening rooms. Here, the cheese matures depending on the desired flavour intensity and texture. The longer the cheese matures, the spicier and drier it becomes.
