Own brand 35+ extra matured cheese with less fat and less salt, from our own brand “Veenlijner”.
Our oldest variant of the Veenlijner has been on wooden planks for 9 months,
after countless times turning, cleaning and coating, this delicious spicy but still very easy to cut and ready to be sold to you as a cheese lover of spicy cheese.

What is the difference between 35+ and 48+ cheese?

The 48+ cheese is made from whole (fat) milk, our Veenlijner is made from semi-skimmed milk (less fat).
Veenlijner is a cheese with a full flavor but less fat and less salt, so you can still enjoy a tasty cheese and eat consciously.
The number before the + indicates the amount of fat in the cheese, more precisely the amount of fat in the dry matter, i.e. the amount that would remain if you removed all the moisture from the cheese.

35+ cheese contains 35% fat?

A 35+ cheese does not consist of 35% fat. The dry matter consists of 35% fat. A little calculation: cheese consists of about 40% moisture and 60% dry matter. Then 100 grams of 35+ cheese contains 40 grams of moisture and 60 grams of dry matter. Of that dry matter, 35% is fat. 35% of 60 grams is 21 grams. conclusion a kilo of young Veenlijner contains 210 grams of fat, and a kilo of young Veense Gouda 48+ contains 288 grams in short: 100% taste with 28% less fat!

Cheese factory de Graafstroom:

After skimming and pasteurizing, we add rennet and lactic acid to the milk. This gives our cheese its delicious taste. The thick mass that is then created is called curd. By stirring and cutting it, a liquid is released, the 'whey', which is used as an ingredient for high-quality infant nutrition. Then we put the curds in the cheese mold and press them together to get the perfect cheese shape. The cheeses become really tasty in the brine bath, where they can soak in the characteristic (salt) cultures of De Graafstroom. After brining, our cheeses are given a protective layer so that they lose less moisture and the quality is preserved. Then the cheeses are allowed to ripen on original wooden shelves in the cheese warehouse, before they go to the store and end up in our kitchen.
Our creamy young cheese, soft young matured, creamy matured and spicy old cheese are all delicious and healthy: We strive for the lowest possible fat and salt content in our characterful cheeses. We call this 'cheese from the heart'; cheese prepared with great care, passion and love with the milk of the best cows from the Groene Hart and surroundings.
